Trieste's take on goulash, born of the city's Austro-Hungarian past. Beef is simmered slowly with onions, tomato and Hungarian hot paprika, then pulled toward Italy with rosemary, thyme, marjoram and bay. The result is a deep, spice-dark stew meant for polenta.
