French Meat Dishes

61 of France's 444 ranked dishes are meat, and by our raters the best is Magret de canard, the seared duck breast of Gascony carved like a steak, Nº 285 in the world.

61 dishes ranked·13.7% of the cuisine·1,383 diner ratings·Top rank Nº 285

France cooks meat the way it cooks everything, by region and by sauce. Its 61 ranked dishes run from the duck heartland of the southwest, where magret and confit rule, through the steaks of the bistro to the sausages and offal of Lyon and Alsace. Poultry, beef, pork and the odd lamb stomach all get their moment, and almost every one arrives with a pan sauce.

The best-rated by our diners is Magret de canard, the flash-seared duck breast at Nº 285 worldwide, a dish invented within living memory. Fame, though, runs on a different track: the most-reviewed French meat dish is not the duck at all but Steak au poivre, the peppercorn-crusted bistro steak that draws the most diners of any dish here. Read them below: the signature dishes, by region, or the complete list of all 61.

Magret de canard

Duck breast from a fattened bird, scored, seared skin-side down until crisp, and served rosy-pink and sliced like a steak. The idea dates only to the 1950s, when a Gascon chef cooked the breast rare, and it has been a bistro classic of southwest France ever since.

Châteaubriand, beef dish from France

2ChâteaubriandNº 337

A thick cut from the heart of the beef tenderloin, grilled or roasted and classically served for two with a béarnaise or a red-wine sauce. Named for a 19th-century writer, it refers as much to the method as the cut, the grand centerpiece of an old-school French dinner.

Steak au poivre, beef dish from France

3Steak au poivreNº 393

A steak pressed all over with cracked black peppercorns and seared, then served in a pan sauce of cream, stock, and cognac, often flambéed. The pepper crust bites and the sauce soothes, and it is one of the enduring classics of the French bistro.

Confit de canard, duck dish from France

4Confit de canardNº 1,215

Duck legs salted, then poached slowly in their own rendered fat until the meat slips from the bone. Once a way to keep a bird through the winter, it is now the great comfort dish of Gascony, the skin crisped in a hot pan just before serving.

What is France known for in meat?
Duck and sauce, above all. Two of France's four best-rated meat dishes are duck, Magret de canard and Confit de canard, both from the Gascon southwest. The rest are bistro steaks finished in the pan: Châteaubriand with béarnaise, Steak au poivre with cognac cream.

Which region of France makes the most meat dishes?
Among dishes with a named home, Lyon and Alsace tie at the top with three apiece, Lyon on offal and charcuterie, Alsace on its pork and Fleischnacka. Brittany follows with two. Most French meat dishes, though, are logged simply as pan-French, without one town's claim.
