Meat is where China's kitchen goes formal. 50 of its ranked dishes belong here, nearly a fifth of the whole cuisine, and the register runs from banquet centrepiece to roast-shop staple: duck air-dried over days, pork belly braised to collapse, whole geese and suckling pigs turned in charcoal furnaces until the skin cracks.
