The most popular of all pierogi, filled with a mix of mashed potato and fresh twaróg cheese, boiled then often pan-fried in butter and onions. Despite the name, which points to old Red Ruthenia rather than Russia, they are as Polish as it gets, eaten with a spoon of sour cream.
