Seafood is the most local food there is. What a coast eats depends on what its own water gives up that morning, so no single cuisine owns it the way France owns the sauce or Italy owns pasta. 535 dishes from 110 countries make the ranking, from a plate of Greek grilled octopus to a paper cone of English fish and chips, and they divide between the fish that fill most of the catch and the shellfish prized above it.

Quality clusters where you would not expect.
